Crafting Chili Crisp with Hei Ma

Join us at Gather Sebastopol for a hands-on chili crisp workshop with Lani Chan, founder of Sonoma County’s award-winning Hei Ma. You’ll taste a selection of chili oils and explore how chiles, aromatics, oil temperature, and texture work together before building and seasoning a custom blend of your own.
In this workshop, you will:
• Taste and compare chili oils and explore what makes each distinct
• Learn how chile varieties, aromatics, seasoning, and oil temperature shape flavor and crunch
• Build your own chili crisp blend and carefully infuse it with hot oil
• Take home a pint of your custom chili crisp, a jar of Hei Ma, and a recipe scaled for the home kitchen
No prior experience required. All materials are included.
